Lamaro’s Hotel South Melbourne to showcase international hospitality workers affected by the COVID-19 crisis.
Every Thursday Lamaro’s Hotel to shine a spotlight on International kitchen staff as they design an original menu inspired by their homelands.
Lamaro’s Hotel in South Melbourne is raising awareness of the plight of international hospitality workers who have been affected by the COVID-19 crisis and are ineligible for government support. Acclaimed Executive Chef and part owner, Geoff Lindsay, will shine the spotlight on his international kitchen staff by offering each of them the chance to design special menus that showcase their culture and traditions, available for pick-up each Thursday from April 23.
Currently, international workers on 457 and 482 visas are ineligible to receive government support during the COVID19 crisis, despite making up a significant number of skilled workers, particularly in the hospitality industry. By showcasing the work of his international staff, Lindsay hopes to firstly, keep them employed, and to shed some light on the struggles facing these workers who are the backbone of many kitchens around the country.
“Lamaro's relies on its share of wonderful international staff, so far from their homes and families at this scary time. We believe they deserve the same status and support as permanent residents. They should be allowed access to Centrelink payments and JobKeeper assistance. We would be lost without them,” said Geoff Lindsay – Executive Chef and part owner, Lamaro’s Hotel.
Each Thursday, one or more of Lindsay’s talented international staff members will design a bespoke menu available for pick up between 12:00pm and 6:00pm with a focus on their home culture and traditions.

Geoff Lindsay: Geoff is the chef behind modern Vietnamese restaurant Dandelion and previously Pearl Restaurant & Bar. In 2018 He teamed up with Paul Dimattina to take over Lamaro’s Hotel.
Through his time at Pearl from 2000-2010, the restaurant was renowned worldwide for its innovative Modern Australian cuisine and was one of Australia’s best-known and respected restaurants. During this decade Geoff presented guest Chef promotions in 5-star hotels in Toronto, Dubai, Singapore, Morocco, Jordan, Bahrain, Bangkok, across Australia and New Zealand, as well as in New York at the famous James Beard Foundation.
Geoff has operated restaurants in Bali and Hong Kong and has received countless awards in the Melbourne hospitality scene. In 2005 he was named Chef of the Year by 'The Age Good Food Guide'. He has twice won Best New Restaurant, won Restaurant of the Year, three times Dish of the Year and has been awarded over 40 Chefs Hats in his 30-year career.
Paul Dimattina: Best known for his career as a Western Bulldogs AFL star, Paul also has a rich history in the hospitality industry. After studying at William Angliss College, Paul spent 1 year at Zagames Ivanhoe Hotel managing the pub for the Zagame family before starting Dimattina’s Restaurant in Lygon St Carlton that he and his siblings ran for 20 years. Paul’s Grandfather Frank Dimattina co-founded Mocopan Coffee in 1954 (the first Italian family to roast and blend coffee in Melbourne) before the younger generation started Dimattina Coffee in 1998. The Dimattina family also owns the two restaurants in Broadbeach on the Gold Coast, the iconic Mario’s Italian Restaurant and Beachside Pavilion.
